Sweet Summer Blackberry Lemon Cheesecake Bars

Whether you're planning a family outing, stocking up for homemade recipes, or simply enjoying a sunny day on the farm, our U-Pick blackberry season is the perfect excuse to head outdoors.

These Blackberry Lemon Cheesecake Bars combine a buttery graham cracker crust, creamy cheesecake filling, bright lemon, and a swirl of fresh blackberry sauce for a dessert that's as beautiful as it is delicious.

Blackberry Lemon Cheesecake Bars

Prep Time: 25 minutes
Bake Time: 45 minutes
Chill Time: 4 hours
Makes: 16 bars

Ingredients

Blackberry Swirl

  • 2 cups fresh Colonial Farms U-Pick blackberries
  • 2 tablespoons granulated sugar
  • 1 tablespoon lemon juice

Crust

  • 2 cups graham cracker crumbs
  • ½ cup melted butter
  • 2 tablespoons sugar

Cheesecake Filling

  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice

Instructions

  1. Preheat oven to 325°F and line an 8x8-inch baking pan with parchment paper.
  2. In a small saucepan, cook the blackberries, sugar, and lemon juice over medium heat for about 8 minutes until softened. Mash the berries, then strain through a fine mesh sieve if you'd like a smoother sauce. Allow to cool.
  3. Mix together the graham cracker crumbs, melted butter, and sugar. Firmly press into the prepared pan and bake for 8 minutes.
  4. Beat the cream cheese until smooth. Add the sugar, eggs, vanilla, lemon zest, and lemon juice, mixing until just combined.
  5. Pour the cheesecake filling over the cooled crust.
  6. Spoon the blackberry sauce across the top and gently swirl with a knife to create a marbled pattern.
  7. Bake for 40–45 minutes, until the edges are set and the center has a slight jiggle.
  8. Cool completely, then refrigerate for at least 4 hours before slicing into bars.

Serve chilled with a few fresh blackberries on top for an extra burst of summer flavor.

On Saturday, July 11, home bakers are invited to compete in our annual Berry Bake Off. Bring your favorite berry-inspired dessert—whether it's bars, pies, cookies, cakes, pastries, or another creative treat—for a chance to win:

  • Bragging rights as one of our top berry bakers!

Bakers should bring one entry for judging plus at least 100 bite-sized samples for guests to taste. Check-in runs from 11:30 a.m. to 12:15 p.m., tastings begin at 12:30 p.m., and winners will be announced during the 1:15 p.m. awards ceremony.
