5–6 cups mixed winter greens (kale, spinach, arugula, or salad blend)
1 cup shredded carrots
½ cup thinly sliced radishes
¼ cup toasted pecans or walnuts
¼ cup dried cranberries or sliced apples
Optional: goat cheese or feta
3 tbsp olive oil
1½ tbsp apple cider vinegar
1 tbsp Dijon mustard
1–2 tbsp honey
Salt + black pepper to taste
Prep the greens
