Nothing says spring quite like a classic strawberry dessert recipe made with fresh, juicy berries. This strawberry shortcake highlights the sweetness of local strawberries and is the perfect way to celebrate the season—whether you’re picking them fresh or growing your own at home from our greenhouse varieties like Quinault, Ozark Beauty, and All Star.

Why Fresh, Local Strawberries Matter

Using local strawberries makes all the difference in flavor. Varieties like Quinault and Ozark Beauty are known for their sweetness and extended harvests, while All Star produces large, flavorful berries perfect for desserts like this one. If you’re looking to grow your own, you can find these strawberry plants right here at Colonial Farms in our greenhouse.

Ingredients

For the shortcakes:

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup (1 stick) cold unsalted butter, cubed
  • 2/3 cup milk or heavy cream
  • 1 tsp vanilla extract

For the strawberries:

  • 1 lb fresh strawberries, hulled and sliced
  • 1/4 cup sugar (adjust to taste)

For the whipped cream:

  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

Instructions

1. Prepare the strawberries
In a bowl, combine sliced strawberries and sugar. Stir gently and let sit for 20–30 minutes to release their natural juices. This step enhances the flavor and creates a syrupy sweetness perfect for shortcake.

2. Make the shortcakes
Preheat your oven to 425°F. In a large bowl, whisk together flour, sugar, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in milk and vanilla until just combined.

Turn the dough onto a floured surface, gently pat to about 1-inch thickness, and cut into rounds. Place on a baking sheet and bake for 12–15 minutes, or until golden brown. Let cool slightly.

3. Whip the cream
In a chilled bowl, beat heavy cream, powdered sugar, and vanilla until soft peaks form.

4. Assemble
Slice the shortcakes in half. Layer with strawberries and their juices, then add a generous dollop of whipped cream. Top with the other half of the shortcake and add more berries and cream if desired.
